Baked Turkey Spaghetti (Small Batch)

1. Preheat oven to 375°F.
2. Prepare noodles according to package instructions. Drain and set aside.
3. Over medium heat, sauté onions, in oil of your choice, until fragrant. Add in meat and cook until browned. Drain if necessary. Add in minced garlic, and cook until fragrant.
4. Add tomato paste. This will allow you to deglaze your pan. Then, add in your seasonings and mix.
5. Add your jar of marinara sauce and simmer on medium low for 10 minutes.
6. As your meat sauce simmers, begin working on your ricotta mixture. Combine all ingredients and mix well.
7. Now that our meat sauce, ricotta mixture, and pasta are ready, it’s time to assemble our baked spaghetti. In a 9 x 13 deep dish pan layer the bottom with meat sauce, then pasta, then ricotta mixture. Continue with this pattern until your pan is full. Top with shredded cheese of your choice and parsley. I used cheddar and mozzarella.
8. Place a sheet pan on the bottom of your dish to prevent your baked spaghetti from bubbling over into your oven. Place in the oven, uncovered, for about 25 minutes, or until your cheese develops a nice crust.
9. Serve with a nice side salad and garlic bread.
