Creamy Elote Dip!

In an 8-inch cast iron skillet, combine the corn, diced jalapeño, minced garlic, softened cream cheese, sour cream, mayo, lime juice, mozzarella, chopped cilantro, and Trader Joe’s Everything But the Elote Seasoning (to taste). Top the mixture with white sharp cheddar cheese or your grated cheese of choice. Bake on 350°F for 10 minutes. Then, broil on high for 5 minutes, or until the cheese has browned a bit. Toppings are optional; garnish with about 1/2 cup of crushed lime hot cheetos, 1 tablespoon of cotija cheese, and fresh cilantro if desired.
